The Philosophy" It was in Brittany that my passion for fine cuisine was born. Memories of special moments with family and friends around a table accompany me in my work today. Many years of practice amongst peers, whose skills were established in different regions, allowed me to explore and master many culinary techniques in order to derive the best part of the best products at the best moment.
